About this deal

Ink Gin® is a premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives.Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance. The LIVE virtual tastings are carried out in the last week of the month. Please keep an eye on our socials for confirmed dates! It was all a giant experiment and the eureka moment came when he discovered that butterfly pea infused gin changed colour from inky blue to pink when mixed with, of all things, tonic water. That flower would go on to become the hero botanical of the gin, and the name of course, was to be Ink Gin. Records the default button state of the corresponding category & the status of CCPA. Ink Gin — Ink Gin

Paul experimented infusing different liquids with the flower petal and the eureka moment came when the earthy flavoured deep indigo tea changed colour from blue to pink when mixed with tonic water. He had found the hero botanical of Ink Gin. Butterfly pea flowers are highly sensitive to pH. When the floral-infused Ink Gin is mixed with something of low pH (including gin's best friends; tonic water, lime or lemon), the colour changes dramatically from blue to blush pink. Not magic – just science.

Cocktails — Ink Gin

Paul wanted to make a gin. But being an unknown distiller clattering around a small farm shed in Northern NSW, he knew he had to do something truly different to make his gin stand out.Being a disrupter is a risky business and he knew that the gin would have to be very, very good. It took three long years to develop the recipe, but by 2014 the final botanical blend was settled. It featured twelve other native, traditional & exotic botanicals that worked in perfect harmony with the flower. The final ingredient is added in a post-distillation infusion. The specially prepared petals of the butterfly pea flower are steeped in the still for twenty-four hours to give Ink Gin its distinctive colour. What does a fella do when he’s planted his crop to make the country’s first cane juice rum, but knows that the whole project will take years? He decides to make a gin of course.
