Zavala, Juan Carlos (11 January 2021). "Uso del agua, el lado oscuro tras el "boom" de la industria del mezcal en Oaxaca". Oaxaca (in Spanish) . Retrieved 11 January 2021.

a b c d e "Modifications to the General Declaration on the Protection of the Appellation of Origin "Mezcal" published in the Official Journal of the Federation on 28 November 1994 (MX082)". Samantha Burke, Managing Director of Love Drinks said: “Considering the issues hitting hospitality from staff shortages to rising prices, the response to this competition has been incredible with some absolutely amazing entries. The mezcal moment is definitely here. I want to say a massive thank you to everyone who got involved, commiserations to those who didn’t make it through and best wishes to the finalists.” The mash is allowed to ferment, the resulting liquid collected and distilled in either clay or copper pots which will further modify the flavor of the final product. [5] The distilled product is then bottled and sold. Unaged mezcal is referred to as joven, or young. Some of the distilled product is left to age in barrels between one month and four years, but some can be aged for as long as 12 years. [18] [9] Mezcal can reach an alcohol content of 55%. [18] Like tequila, mezcal is distilled twice. The first distillation is known as ordinario, and comes out at around 75 proof (37.5% alcohol by volume). The liquid must then be distilled a second time to raise the alcohol percentage. Love Drinks’ summer mezcal competition for its award-winning Zignum and El Recuerdo brands has shifted up a gear with the ten finalists announced following the conclusion of three incredibly competitive semi-finals. Aged in a combination of French and American oak for a minimum of 18 months, beyond the minimum time required by the regulations of the Denomination of Origin. A truly extraordinary mezcal, ZIGNUM® Añejo Mezcal showcases the expertise of the Maestro Mezcalero, who blends perfectly aged liquid from both French and American oak casks. Rich coffee, chocolate and maple syrup and a smooth, slightly sweet finish. Savoured neat, it makes any occasion a special one. El Recuerdo Mezcal is made from choice Agave Espadín plants and is crafted with traditional techniques.

The ZIGNUM distillery also has a prominent focus on the environment, with its Método Verde® Sustainability Programs aimed at having the lowest possible environmental impact. As well as operating its own wastewater treatment facility, ZIGNUM also uses solar energy for heating; is certified “Clean Industry” by Mexico’s Ministry for Environmental Protection, and Kosher, among other quality designations. The distillery is also animal cruelty-free, with no mules or horses used. Samantha Burke, Managing Director of Love Drinks, said: “The Mezcal star has been rising and even the pandemic hasn’t dented people’s interest and enthusiasm for it. These two brands have been leading the charge with flavour, authenticity, provenance and sustainability central to everything they do. Unlike how most tequila is consumed over here, mezcal is made to be savoured and works brilliantly with food so we’re excited by the prospects in 2021.” The regulations have been controversial, not only from small artisanal producers for whom the cost of certification is prohibitive, but also from traditional producers outside the chosen GI states and those producers who believe that the term "mezcal" should not be owned by the state. Uncertified producers are prohibited from using the term "mezcal" on their products. Some producers and importers have responded by labeling their products as "destilados de agave" or "agave spirits", a category now recognized by the United States' TTB and in increasing use. [16]The time in the barrel has turned the mezcal into a beautiful golden colour. On the nose there’s barely a hint of smoke, but there’s a definite vanilla sweetness, rich caramel/toffee aromas, some oakiness, and a dash of spice. It smells intriguing.

While fermented drinks from agave (like pulque) is pre-colonial, [10] the distillation of agave heart juice into mezcal was only introduced in the colonial era. How stills reached New Spain remains a point of scholarly dispute; some historians attribute the propagation of distillation to the Spanish who learned the process during the Moorish rule of Iberia, while others trace its origins to Filipino sailors who, after the opening of the galleon trade in the 1570s, brought stills with them to make vino de coco (coconut liquor). [11] Zignum is inspired by the beauty of the most important civilisation of the Zapotec culture, Monte Albán, the ancient city synonymous with Oaxaca and the famous Zapotec temples. Zignum Reposado is aged in American White Oak barrels and is celebrated as an exceptionally smooth mezcal, winning it many awards along the way. Agaves or magueys are endemic to the Americas and found globally as ornamental plants. More than 90% of mezcal is made in the Mexican state of Oaxaca, but is now produced and commercialized throughout Mexico for the national and international market. Native fermented drinks from maguey plant, such as pulque, existed before the arrival of the Spanish. a b c d e f "Mezcal"[Mezcal] (in Spanish). Oaxaca: Municipality of Oaxaca. Mezcal is made from over 30 agave species, varieties, and subvarieties, in contrast with tequila, which is made only with blue agave. [20] Of many agave species that can be used to make mezcal, seven are particularly notable. [14] There is no exhaustive list, as the regulations allow any agaves, provided that they are not used as the primary material in other governmental Denominations of Origin. [21] The term silvestre "wild" is sometimes found, but simply means that the agaves are wild (foraged, not cultivated); it is not a separate variety. The fact that distillers are now producing and marketing both reposado (rested) and aňejo (aged) mezcals is a sign that the market is maturing, and people are becoming more and more aware of what mezcals have to offer. Differences between Mezcal and Tequila El Recuerdo – made famous by its association with American mixed martial artist and UFC champion Jorge Masvidal – and the ultra-premium, multi-award winning ZIGNUM® Mezcals were launched by Love Drinks in 2020.
