About this deal

Slight oddness aside, it became very clear that there is no magic art to whisky judging. It is still all a matter of opinion. There were some widely divergent scores as personal taste reared its head, even within our pod of four. I can’t help but think that perhaps whisky could benefit from adopting aspects of approaches from elsewhere within the drinks industry - The WSET (Wine and Spirit Educational Trust) Systematic Approach to Tasting Wine provides an excellent (and scalable with experience and ability) matrix for the judging of quality. Utilising a matrix-like approach seems dreadfully middle-class business school, but it could provide baseline expectations and offer more gradation than a points scale that punishes and praises within 10% of each other. the finish takes that bitterness and runs with it, leaving you with an unpleasant, and often metallic, flavor in your mouth. Long finish, a touch of ash and brine, bold and full of flavor. Pepper, caramel, fresh biscuits and sweet buttercream. It has a few core flavors which could be rich but they feel too distant and the thinness of the mouth feel just underlines that fact. Provided with a briefing from two current whisky award judges (who gave us the guidelines for the most recent whisky awards that they both judged) off we set. I have a few observations from this evening, that I’m still trying to work though in my head, and with some of them, frankly I’m struggling. Firstly: Scores below 60 are deemed faulty (seems completely fair enough to me), but just 10 points higher at 70 and you’re straight into the Silver Medal category. Wow. There’s very little difference relatively between a whisky deemed incorrect from a production standpoint and another whisky which would be given a prize for being indicative and representative of quality. Surely there should be more nuance than just 10 points between failure and accolade?

The word “Aultmore” originates in the Gaelic term “A t-Allt Mor,” roughly translating to ‘big burn.’ Here, the ‘burn’ refers to the Burn of Auchinderran, the pristine water source for the distillery. Today, I’m diving into the Aultmore 18 yo whisky, and what immediately captures my attention is the enchanting name of their single malt collection: Foggy Moss. Just mentioning it conjures a vivid image – a hauntingly beautiful scene of fog weaving through the corridors of a moss-draped, long-forgotten castle nestled on the misty moors.Rich on the palate, a bit of smoke, salinity, crushed stone and lemon curd. It's just peppery and smoky enough to give complexity - this is by no means a peated, or heavily smoky dram. Charred pineapple, vanilla bean, toffee, fresh rising bread, salted caramel. Really decadent, interesting, rich for 46% ABV. the nose is nice (and easily the best part of this whisky) with a decent amount of complexity and variety. As it turns out, my imagination is pretty close to the mark. Aultmore Distillery is nestled in the heart of the Scottish Speyside region, specifically in Banffshire. This location often finds itself veiled in a dense, mysterious fog, which only adds to the allure of this remarkable distillery.

Colour… I can pretend I’m a whisky snob, I can bang on about knowing the ins and outs of the industry, but here I am, skimming along until something catches my eye. (Sherry bomb enthusiasts, take note here, I was looking for a non-sherry cask whisky. I have plenty of those.) It is shallow. Maybe it’s a bit like going on gut instinct, rather than being seduced by any of the marketing copy on the bottle (I jest, of course, most whisky copywriting is hilarious, I rarely trust it). Indeed, perhaps I’m just so jaded that I cannot trust anything now: in the absence of good information on how the distillate was made, or really what the casks were, can you blame me for looking at the colour? Adding a few drops of water softens the slight alcohol heat. It brings forth the green notes, creating a complex and utterly delightful experience. I won’t name names, but let’s just say you look at the monthly outturn of some of the more fan-favourite bottlers and despite being twenty-something years of age the liquids are simply one Pantone away from new make spirit. This makes me wonder what on earth have these whiskies being matured in? How much amelioration has gone on, if any? Were these vessels completely inert? No partnership, joint venture, agency, or employment relationship is created as a result of your use of the Service.
