This whole wheat pasta recipe works best with white whole wheat flour or whole spelt flour. Using 100% regular whole wheat flour will results in too dense pasta dough and noodles. Birboni is an ancient pasta of the Amalfi Coast, the origins of which lie in the housewive's kitchen. The word tagliatelle comes from the Italian word tagliare, which means to cut, and is a staple in many Mediterranean and European countries. The ribbons are perfect for dishes such as Bolognese or carbonara as the pasta soaks up the flavours. We recommend serving with a rich tomato sauce and some parmesan cheese for a decedent dish! Birboni are usually combined with a few simple, local ingredients: anchovies and Colatura di Alici, a concentrated anchovy sauce that comes from the coastal village of Cetara. The sauce is available in Italian delis, however birboni are only obtainable in the local area, so I have substituted wholemeal (whole wheat) tagliatelle here. Store uncooked pasta nests in an airtight container lined with semolina-dusted parchment paper in the fridge for up to 24 hours. Try to use a wide container so that the nests rest in one even layer to prevent squishing. By stripping pasta of these unwanted nasties, it's often noted that organic pasta can also taste better. So, to up the eco-friendliness and potentially even the flavour of your pasta, look for any that is 100% certified by one of the recognised bodies like EcoCert and the Soil Association.With pasta almost entirely being made of wheat or wheat alternatives, organic pasta, therefore, comes down to the farming of these ingredients. Organic wheat farming practices include farming without the use of herbicides, pesticides and synthetic fertilisers, all of which can have negative impacts on both the environment and our health.

First, marinate the goats' cheese at least 2 days before using. Lay a single layer of goats' cheese slices in the base of a clean, sterilised 350g jar. Pour in enough olive oil to cover the cheese. Add 2 sprigs of thyme, a few peppercorns, 2 pieces of garlic and a bay leaf. Continue layering the remaining cheese, oil and seasonings until you have used up all the ingredients. Lightly press the last layer down to make sure it's submerged in oil.Seal the jar and place in the fridge for marinate for at least 2 days before using; bring to room temperature before serving. Meanwhile, heat the olive oil in a large saucepan or frying pan (skillet) set over a medium heat. Add the chilli and garlic, and sweat for 1 minute, then add the anchovy fillets and cook until the anchovies have melted. Stir in the chopped walnuts, half of the parsley, and a couple of tablespoons of the pasta cooking water. Continue to cook, stirring occasionally, until the pasta is cooked. Remove and discard the garlic cloves. For longer-term storage, generously dust each nest with semolina flour. Allow to dry for 5 to 10 minutes. Meanwhile, line a baking sheet with parchment paper and dust with more flour. Loosely arrange each nest on the baking sheet (make sure they're not touching), and freeze for 1 hour. Transfer the frozen nests to an airtight container and freeze for up to 1 month. Cook from frozen (frozen pasta may take an extra couple of minutes to cook through). Warm the olive oil in a large frying or sauté pan over a medium heat and add the onions. Sauté for 10 minutes or until they're beginning to brown. Add 1 teaspoon sea salt, lower the heat slightly and cook for 15-20 minutes or until the onions are soft and caramelised. Meanwhile, bring a large pan of salted water to the boil. When the onions are caramelised, cook the tagliatelle for about 8 minutes, or until al dente. Drain the pasta and return it to the pan. If you have a pasta machine or pasta attachment for your stand mixer, definitely use that to help you roll out and then cut the noodles to desired width. Follow the instructions of your particular machine.

Even smarter

Bring a large pot of salted water to a boil. Gently drop each nest into the pasta water. Once all of the nests have been added, stir the pot, and cook until al dente, 1 to 4 minutes. Using tongs, transfer the pasta to a saucepan with your desired sauce and toss to coat. Serve immediately.
