I myself rather enjoy sherry once in a blue moon (as well in cocktails) so I’ll probably pick up a bottle for the collection. This rum is too sweet and has to much taste of the PX Sherry in my opinion, but it has been very enjoyable to follow the development of this rum from the base via 5 + 3 to 5 + 5 and see how this aging (and eventually some added flavors) have changed taste and appearance. Molasses and baking spices jump out as well, and in particular the flavour of vanilla, cinnamon and nutmeg seem to reach out at me. Initially, it promised to be a new member of my galley staples…… nice rich nose, full body, classy presentation etc…… but like you, something in the flavor profile just left me confused.

Safe to say the use of two different casks (ex-bourbon and ex-sherry) is where the name Dos Maderas (“two woods”) comes from. Enjoyed with advantageously in a suitable glass, but also very used by professional bartenders in Div.

The powerful and aromatic ROM is made on pot stills and the more gentle and rounded on more modern column plants. Mi problema (Y repito --MI-- problema) es que no me gustan los rones dulces, siendo los Dominicanos de los mas dulces que he probado. Rums from Barbados and Guyana are matured for five years in the Caribbean before being transported to Jerez where they are further matured in solera systems of Dos Cortados Palo Cortado Sherry casks (exactly the same as the 5+3) and then also Don Guido Pedro Ximénez Sherry casks.It is unique becuase of its triple ageding process where for 5 initial years the rum is aged in the Carribean in oak casks. Sherry Both Don Guido and Dos Cortados have matured for 20 years, as evidenced by Jerez-Xérs-Sherry, the oldest destination in Spain.

After 30 minutes in the glass almost all the whiskey/bourbon taste is gone, and the sherry flavour is fruiter than sweet. I hope to see the day when brands with additives would be required or allowed to mention the amount they used on their labels. Experience has taught me that perhaps the most consistent thing for my palate to do, is to change it’s mind. The bottling serves up delightful notes of leather, sweet dried fruits, molasses, crumbling brown sugar, dark vanilla, chocolate, nutmeg, orange peel, walnuts, cloves, dark oak, toffee, and espresso. Finally the tasting of the 5+5 which is the 5+3 finished for two more Solera years in used PX Sherry barrels.Its unique flavor and aroma make it ideal for rum lovers and high-quality beverage enthusiasts in general. Vanilla, cinnamon, allspice , nutmeg and marzipan all seem to find their way into the breezes as does a nice impression of toasted coconut and orange marmalade. With that said, I can see some people getting into rum via trying this, just like a lot of current rum drinkers got into rum via Ron Zacapa “23.

The rum matures in American sherry casks in the Caribbean for the first five years, until it is shipped to Europe, Spain, at the end of that time. This double aging process gives the rum a unique flavor and aroma that make it ideal for enjoying alone or in cocktails. Had a sample of this in a box of 5 which my husband rated highly so picked up a bottle for him for Christmas. My only quibble is that my bottle has a clear plastic label (rather than the darkly coloured brownish red label shown to the left). The region of Spain where the winery is located has a climate perfectly suited for wine and is known as Europe's wine cellar.When it arrives it is transfered to casks which previously held Dos Cortados, Palo cortado sherry for 3 years then transfered to casks which previously held Don Guido Pedro Ximenez sherry, the sweetest variety of sherry for 2 years.
