While there’s no upper limit for the number of botanicals used when distilling gin, The Botanist surges ahead with a whopping 22 different florals, fruits, and herbs used in every bottle. The Botanist is distilled on Islay, Scotland, and all of the botanicals included in the spirit are hand-foraged on the island. In 2017, Jenny decided to turn her entrepreneurial skill set to another of her passions. Hayman's Old Tom Gin is one of the best examples of this old-world style, though it was only recently launched in 2007. Produced by Hayman Distillers of Witham, England, it is based on a family recipe from the 1870s. Amongst other initiatives, all the teams spent botanicals are turned in to compost, and used to fertilise the flowers and trees on their farms land and aforementioned forest. And once in to the gin making itself, the discarded heads part of the spirit is handily converted into cleaning products for use around the farm (with a juniper fresh scent you can well imagine!) And let me tell you, this makes for a stunningly good G&T! Again, an audible wow was uttered. The light tonic allows more of those freshly sliced apples and pears to burst forwards, with a crunch of sweet rhubarb and kiss of watermelon like freshness. It’s crisp, refreshing and perfect for the spring weather! This blog is also brought to you in recognition and celebration of International Scottish Gin Day 2021! Hitting your calendars on 2nd October this year, the team at ‘The Gin Cooperative’ (www.thegincooperative.com) are doing an incredible job of setting up the events third annual outing! Given the explosion in the Scottish gin industry recently, Crossbill is a relative veteran! Established in Aviemore, Crossbill Gin was launched in 2014, before moving their home to Glasgow, opening a gin school at Barras Art and Design (BAaD) in 2017. When it comes to food, I always used to raise an eyebrow when Stilton made it anywhere near our shopping list. Why would anyone eat mould?! These days, if panic buying were ever to reach a clear down of the middle class deli counter, I’d seriously consider leaving a Babybel to go out of date just to get a taste of the stuff! Situated in the north west coast of Scotland, sits the small village of Ullapool, the home of Highland Liquor Company. Their flagship product, takes its name after the original settlement on which the village now stands, with a croft being the Scottish word for a small farm.

The bottle design is inspired by traditional ceramics of Sargadelos from the gin’s home in Galicia. Synonymous with utilising singular designs and white and blue colours, Nordés mirror these designs expertly to create a bottle instantly recognisable as their own. To taste neat, and there is an initial sweetness that washes over the palate – the zing of fresh lemon brings the tastebuds to life and grips your attention. I would go further to say that the flavour profile brings in suggestions of pithy lemon zest and peel, which only serves to enhance the citrus profile. A citrus forward gin you say? Tell me more… On the bottom of the bottle there’s a hidden message in Latin – “Esse Quam Videri”, which means “to be, rather than to seem”. Jenny in Brigthon says:“This is a delight to drink. It’s fresh, like a walk across a field after a heavy downpour, hints of spice and juniper and something aromatic and floral at the end.”

It’s one of several gins in their range which includes their classic London Dry as well as Cannonball Navy Strength. The distillery is also famed for an extensive range of gin liqueurs. Standing in a bottle shop, I was instantly drawn to Silent Pool. I’d never tasted it but such was the beauty of the bottle, I was desperate to try it. The brand takes its name from the legendary haunted Silent Pool in Albury, England, where their distillery sits. Distilled in Cheshire, England, Bombay Sapphire's full list of vapor-infused botanicals include juniper, almond, grains of paradise, lemon peel, licorice, orris root, angelica, coriander, cassia bark, and cubeb berries. It's old meets new with this gin. While the brand is relatively young, having launched in 1987, the beautiful array is based on a recipe from 1761. Distilled with botanicals including lemon verbena and lavender, their Seaglass Gin has a handful of awards to its name including gold at Gin Masters 2019. It’s a gently balanced gin. No single flavour really stands out above the rest. They all work together in harmony but it remains a gin that’s full-bodies and complex. With tonic
