He says, “I originally started experimenting by distilling the flavours, apples and oats, separately and realised that we could use them paired with a classic juniper base to create something unique.”

Earlier this month, the distillery's Bison Grass gin scooped the UK’s Best Flavoured Gin award at the Great British Food Awards, making for an unprecedented double win for this small family-run distillery. The gins range from the new Dark Days London Dry Gin - a premium gin that was created to honour frontline workers during the pandemic. Peel, core and dice the apples. Add to a medium saucepan with 50ml of water, cinnamon, nutmeg, vanilla and brown sugar. Heat on a low simmer for 5 minutes. Combine 50ml of water with the cornstarch. Add the mixture to the pan along with the leftover gin and simmer for another 5 minutes, until the apples are soft.
