It’s certainly not the first place I’d think of, if I ever were to think of starting a distillery. Islands are formidable places by default, owing to weather, tides, isolation. But even places like the Isles of Barra and North Uist are in the early stages of converting — or enhancing — their gin production to include whisky. Inside the Scapa Noust, there are nautical design touches from the local area as a reminder of the area’s history, including a traditional naval radio desk donated by a local Orcadian, as well as a helmet which is over 100 years old and was used by the British navy up until the 1970s.
