About this deal

Sake is born out of simple and natural ingredients: water and rice. Next comes koji, that converts starch into glucose, allowing yeast to start fermentation, thus creating the product we love. Yuzu sake has a light flavor with a unique sweetness. It is just slightly sweet with tangy citrus flavors. Yuzu sake is perfect for summertime sipping. If you are looking for something new and exciting to try, then this sake is a perfect choice! The Umenoyado was the clear winner of the comparative taste test, and The Wife proceeded to buy another three bottles. Because, yuzu addict.

In recent years, sake has rapidly gained mainstream traction at bars, restaurants, and grocery stores stateside. The traditional Japanese rice wine comes in variations that boast a wide assortment of textures and flavor profiles, but the one you should absolutely be reaching for as the weather heats up is yuzu sake. Some are fruity, some are dry. Some are best enjoyed hot, some cold. Every food and every moment have their right sake. With all three bottles in hand, we decided to do a taste test over the weekend to see which was our favourite. Our baseline was the Umenoyado, and we used it to compare against the other two. For me, sake is a better tool of communication than any social network. More importantly, it does something social networks cannot: it connects me to nature. ”

We want people to drink sake the way people drink wine," says Monica Samuels, vice president of sake and spirits for Vine Connections and a Sake Samurai, a title granted by the Japan Sake Brewers Association to about five people per year who have done the most to promote sake. "I always get asked, 'Is it a beer, wine, or a spirit?' It’s none of those things, I say. It’s sake!" A step up lies junmai sake, which is polished to at least 70% (ie 30% of the rice has been stripped away). These tend to have more umami, savoury flavour profiles. Rather confusingly, 'junmai' also refers to unadulterated sake; non-junmai sakes have distilled alcohol added, to add new notes and smooth out flavours. Honjozo is non-junmai sake polished to at least 70%, and often is well balanced and a good companion for food. Designed to be served at room temperature, this is a big beefy sake that would even stand up as a replacement for your rioja with a Sunday roast or tomahawk steak. That's because it's brewed, like beer, but its alcohol content (around 15% ABV) is similar to wine. It pairs with food in a way that wine cannot, though, since it doesn't have tannins. "It elevates the umami in a dish, but it’s commonly consumed before and after dinner as well," Samuels says. Combine ingredients in a shaker and serve over fresh ice. Garnish with lime wheel. MIKA Brooklyn’s Yuzuni Recipe I’m not immune either, especially since my favourite animal seems to thoroughly enjoy soaking in a yuzu-infused hot spring. Just look at the contented faces of these capybaras in the Izu Shaboten Zoo, as they lie down among the floating citrus. The Jury of the prestigious International Wine and Spirit Competition (IWSC) in London has awarded a GOLD medal in late July 2019. Precisely the incomparable blend of complex yuzu-citrus aromas and soft premium Sake that turns our Yuzu into the perfect drink for the summer has also convinced the judges: Rich, bright citrus bursts forth from the glass: unmistakable yuzu with a gentle floral aroma; a great combination of sweetness and tartness. A beautiful product that captures the flavour of yuzu perfectly. As this round-up attests, you'll find Akashi-Tai's sake's everywhere – from the UK’s leading restaurants to the Queen Elizabeth ocean liner – which is testament to this 167-year-old brewery's obsession with purity. Crafted using three different rice varieties – Yamada Nishiki, Omachi and Gohyakumangoku – from the lesser-known Toyama Prefecture, this sake is as unique as its terroir. Sometimes more can be achieved with less. It seems to be the case with Sakari no. 11: by polishing off half of the rice grain, the true and rich taste of rice can come through. In the millenary world of sake, Sakari is a barely 130-years-old startup. Its young founders wanted to build the future of Japanese society through sake, with study and collaboration. The same spirit still moves us today. Sakari’s five founders are now remembered in our logo: five sake glasses that, meeting in a toast, create a Sakura flower.

Next you have ginjo, at 60% polishing, and daiginjo, at 50%, both of which can be junmai or not. Here you get more delicacy, with fruit flavours, a smooth mouthfeel and clean aftertaste. Junmai versions ramp up the umami and acidity. To make vanilla simple syrup: Add ½ cup water and ½ cup sugar to a small saucepan over medium heat and stir until sugar is dissolved. Once simple syrup is at room temp, add 1 teaspoon vanilla extract.) That flavour is dictated by each brewery's toji – the sake master. Unlike wine, where taste is as much about the soil as the choice of grapes and which kind of wood it's aged in, sake is purely about ingredients and technique, rather than terroir. German Trendscout Ralf Bos has dubbed Yuzu an “emotional food” that creates “goose bumps” and a “warm shiver” on your skin! In combination with mild Premium Sake, Yuzu turns into a uniquely refreshing Aperitif: Just pour Île Four Yuzu Sake over lots of crushed ice in a tumbler for a ‘Yuzu Crush’, or add some Champagne for extra fizz! ‘

Futsu-shu, which is barely polished, is best thought of as table sake. It accounts for the bulk of sake sold in Japan, and though you'll find some paint stripper, there are many excellent everyday drinkers if you look hard enough. We still had to finish the remainder of the other two bottles, and we’ve been drinking them individually over the past few days. Interestingly, on their own, they were actually quite nice. For an ideal pairing, Samuels recommends crunchy, salty foods, like potato chips and French fries. "The obsession chefs are having with fermentation and koji and more Japanese principles of food are bringing sake more to the forefront," Samuels adds.
