The southern half of Rum is home to the monumental Rum Cuillin Ridge – a mountainous series of peaks that culminates with the Askival Corbett at 2,660 feet. Traversing these ridges is a challenge for even advanced hikers but it has to be one of the most enjoyable ways to experience the island. A top floor mezzanine bar with panoramic views of the Leith and Edinburgh skyline and shop complete this one-of-a-kind building. Like Christmas cake in a bottle, it is made usingrumdistilled from freshly pressed sugar cane juice on the Island of Madeira. The nine-storey distillery will produce Scotland’s national drink using barley sourced from a single farm on the outskirts of the city and water pumped from the nearby Pentland Hills.

A classic London Dry Gin, Lind & Lime Ginis produced using just seven botanicals, with juniper at its core, complemented by fresh lime peel and pink peppercorn. The landscape breaks away into patches of woodland near Kilmory and it’s in this area where I saw the majority of the island’s famed red deer, perhaps because of the safety the nearby trees offered them.
