In 1548 the six-year-old Mary, Queen of Scots, having been betrothed to the Dauphin François, disembarked at Roscoff en route from Scotland. The illustrator Henry Gerbault and his wife moved to Roscoff in 1919 and lived there for the rest of their lives.

The opportunity to work alongside Matthew Barrett was too good to turn down. I learnt so much from the ex-Ritz chef and working in a much slower paced role helped me develop a much better understanding of how to organise and run a kitchen. We were a very small team and teamwork was and still is the only way to go for me.Once cool place the onions into a vacuum pouch, in the same pan add the beef dripping, chopped thyme, garlic powder and 1 tsp of Maldon sea salt.

After 2 years at Mere I got the opportunity to go into The Alderley Edge Hotel as Junior Souschef. The Early days at the Edge were all about learning new styles of cuising which is invaluable in any role as a chef. I got the opportunity to grow and learn all aspects of every section which was inspiring .

How they’re harvested 

I started at Hopwood Hall college as a chef and instantly fell in love with it .To me it was the only real time I excelled in something and this inspired me to really get my head down and put in the hard work. College was the first time I really excelled in something and gave me the opportunity to laugh at the teachers who said I would never make something of my life!!!! Those of you of a certain vintage - like me - will well remember the ‘Onion Johnnies’, the Breton farmers and vendors who travelled across to the UK from Brittany to sell their strings of onions slung over their bicycles.

At the end of July, the onions reach their optimal ripeness. Their roots are cut off and they are left to dry in the open air for a bit before moving to a dry and well-ventilated storage. The tops are left attached to the bulbs — it helps them keep longer. Finally, they’re carefully cleaned, trimmed and lovingly braided by hand. It was always an exciting moment for me as a nipper when I spotted a heavily onion-laden bike being pushed up the street by a man, sometimes wearing a beret and striped shirt, and I would run in to tell my mother, who would usually buy a string of onions, whether she wanted them or not. Technology is now widely used in the industry and I am super proud to say we have been a big part of spreading that message.
