About this deal

I used unsalted butter for both the shortbread and caramel layers. You can use salted butter if you like, it won't make it taste salty, instead it will balance out the sweetness. However, I do prefer to use unsalted butter and add my own salt as then I can control the salt levels. You can also use a baking spread, but butter tastes much better in my opinion. It's not that baking spread tastes bad, just that real butter is richer and creamier. And as our Biscoff Tiffin was born, we decided to go crazy and add Biscoff spread to the topping to give it an extra burst of flavour, second to none! You can make a jar in under 10 minutes, so it’s ready to add to your coffee in no time. Here’s what you need. Place a pancake pan or frying pan on a high heat. Add 1 tsp of butter. When the butter starts to sizzle use a spoon or spatula to spread the melted butter across the surface of the pan. Add enough batter to thinly cover the surface of the pan and cook for a minute or two until the underside of the pancake turns golden brown. Biscoff Spice - A special blend of speculoos spices made with cinnamon, nutmeg, ginger, cloves, anise, cardamom, and white pepper is used to give the syrup its classic warm and spicy flavor.

If you would like a lighter-colored syrup, strain twice to remove any remaining spice particles. Variations For best results, make sure you are using a sanitized jar or container to store biscoff syrup as you do not want any bacteria to form. As for alternatives, it would be difficult to suggest something that would give you the same caramelized spice flavour of cookie butter. You could, of course, use sweetened peanut butter and it would work. The flavour would just be different. Alternatively, you could use a hazelnut spread like Nutella. Again, this would bring a different flavour to the overall bake. Lastly, you could omit the cookie butter altogether and still end up with a really tasty millionaire! Customisable with toppings - enjoy these pancakes with the simple yet super tasty Biscoff sauce or add chopped banana, nuts, fresh raspberries or strawberries, or a dollop of your favourite ice cream.Biscoff Tiffin is precisely that, a recipe that mixes a fantastic-tasting biscuit with one of Scotland’s finest traybakes. If it doesn’t smooth out and is still grainy, you can add about 1-2 tablespoons more of hot water, and bring to a boil while vigorously whisking until the sugar is dissolved and the sauce comes together. The homemade Biscoff spice blend can be customized to your personal tastes. Add a bit more cinnamon if you enjoy the flavor and less of the pepper if you don’t enjoy it too spicy I kept my recipe very simple in the end, after testing repeatedly it using different methods and combinations of ingredients.
