For the cheesecake filling, it stands the same that you MUST USE FULL-FAT soft cream cheese. Philadelphia for example is a much more classic cheesecake flavour, whereas if you use mascarpone it would be sweeter! As I mentioned, most of these are down the seasonal Easter aisle so it can be a literal Easter egg hunt to find the right ones. So make sure you allow yourself enough time to make sure you’ve got the ones pictured which are safe for us to eat. There are loads of recipes for cheesecake that tell you to pour the double cream into the cream cheese mixture and whip together. I advise you to whip the double cream separately. Most people know what stiff peaks of double cream looks like, whereas you might not whip the filling enough if you pour it straight in. This method works and your cheesecake WILL set!
