I let these cook for 10 minutes on each side with the lid down before adding a drizzle and seasoning mix and letting that settle for another 5 minutes. For high-temperature cooking you’ll usually want to use lots of charcoal, leave the vents wide open, and wait 60 to 90 minutes for the grill to heat up.

There are 604-square-inches of cooking space with dual-level stainless steel grates that are hinged, making two-zone cooking a snap. When starting your charcoal, you’ll want to leave both the top and bottom vents open pretty wide until the grill gets near the desired temperature. The intake vent is within easy reach on the right side rather than on the bottom so you don’t have to bend down to make adjustments. The ovular grills may also be porcelain-coated metal (often steel), which is lighter and often less expensive; but may not retain heat as effectively.Burping is the remedy for this, and we suggest doing it every time you open the grill— no matter what temperature your thermometer shows.
